Spicy Chicken salad

ingredients

serves 4 people

Sunday roast left overs

  • 800g roast chicken

  • 2 small radishes thinly sliced

  • 1/4 white cabbage shredded

  • 2 med carrots grated

  • 1 small cucumber grated

  • 100g edamame

  • 50g fresh parsley

  • 50g fresh coriander

  • 25g fresh mint

  • 25g Vietnamese mint

  • 50g roasted peanuts

  • 50g crispy shallots

method

For this recipe you will need high speed blender.

  1. using the blender add all the dressing ingredients and blend until smooth and set aside

  2. then take a large frying pan on high heat and add the roast chicken with 1 tbsp cooking oil.

  3. cook until the chicken warms through and starts to become brown

  4. in a large bowl add all the vegetables

  5. add the warmed chicken

  6. mix in the dressing and toss until the salad is evenly coated

  7. divide into 4 bowls and top with peanuts and crispy shallots

SPICY DRESSING

  • 2 green chilies

  • 25g fresh mint

  • 1 large bunch coriander including roots

  • 4 cloves of garlic

  • 30g grated fresh ginger

  • 4 tbsp fish sauce

  • 4 tbsp lime juice

  • 2 tbsp lemon juice
