Chicken Skewers

ingredients

serves 4 people makes 12 skewers

  • 1.2kg chicken thigh fillet, trimmed

  • 2 teaspoons ground cumin

  • 2 teaspoons ground paprika

  • 2 teaspoons ground coriander

  • 2 teaspoons ground turmeric

  • 1/2 bunch fresh coriander

  • 1/2 bunch fresh mint

  • 75g toasted almond slithers

  • 2 teaspoons salt flakes

method

collect all the ingredients before you start

  1. combine all ingredients in a bowl, mix well. Cover. Refrigerate until required.

  2. add chicken to the skewers and sit to the side

  3. brush skewers with a little oil this will stop the meet sticking

  4. in a frying pan or bbq grill, on a medium cook skewers until golden brown and firm to touch

  5. i like to serve skewers with greek yogurt

  6. in a medium serving dish place yogurt in the centre of the dish

  7. pile skewers on top of each other

  8. top with chopped herbs and toasted almonds

serve with coconut rice and edamame soy beans (optional)
